harissa chicken meatballs

Ingredients

  • 1 lb ground chicken (or meat of choice!)
  • 1/4 cup fresh parsley
  • 1/2 of a large white onion, diced
  • 1 tbsp cumin
  • 1/2 tbsp paprika
  • 1/2 tbsp garlic powder
  • 1/2 tbsp ginger powder (or grate fresh!)
  • 1 tbsp harissa paste
  • 1 egg
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. preheat oven to 400 and line a baking sheet with parchment paper.
  2. combine all ingredients in a bowl and gently mix with your hands.
  3. add olive oil to your hands (to prevent sticking!) to gently roll out 10 large meatballs.
  4. bake for 10-15 minutes or until internal temp is 165.
