- 1 lb ground beef divided and rolled into 2 ox balls
- 8 6 inch tortillas (i’ve used both corn and flour, both work)
- 1 small white onion, minced
- pickle slices (or chop up a spear if that’s all you have)
- 6 slices of american cheese
- shredded lettuce
- 1 tbsp butter
- 1 tbsp avocado oil
burger sauce:
- 1/2 cup mayonnaise
- 3 tablespoons ketchup
- 1 tablespoon white vinegar
- 2 tablespoons sweet pickle relish (and some juice)
- salt & pepper to taste
Instructions
prep the burgers:
- divide the ground beef into 2 oz portions and roll into balls.
- add two pans to the stovetop – one to cook your onions slow and low (medium-low) and the other to grill your burgers (medium-high)
- add butter and oil to the onion pan and mix in diced onions.
- once your burger pan is hot, add the burger ball, place a tortilla on top, and use a wide spatula to smash the tortilla completely flat to the pan. be careful! it’s hot! these patties don’t take very long to cook so stay nearby.
- after about 2 minutes, flip the burger tortilla one time for about a minute to toast the outside, add a slice of cheese, (using a lid here would help melt the cheese faster) and remove from heat.
- as you are grilling burgers, mix the onions as they continue to brown and add a pinch of salt. you’ll know they are ready when they start to char on the edges.
- once you’re finished grilling the burgers, add diced pickle, shredded lettuce, the grilled onions, and a drizzle of burger sauce.
