- 3 tbsp unsalted butter
- 1 16 oz bag of marshmallows
- 6 cups rice krispies
- unsweetened freeze dried strawberries
- optional: natural red food dye
Instructions
- add parchment paper to an 8×8 baking dish and set aside.
- melt the butter in a saucepan on the stove on low.
- once the butter is melted, add in marshamallows and stir into melted butter.
- use a food processor or a mortar and pestle to break down 1/4-1/2 cup strawberries into a powder and add to melted marshmallow/butter mixture and food coloring, if using. the only difference will be the lighter pink color versus more red!
- add rice krispies to a large bowl, pouring the melted mallow mixture on top and mix everything together. I like to use my hands, and either add butter or oil to them first so they don’t stick.
- press down with a rubber spatula and add remaining strawberries on top for garnish.
- refrigerate at least an hour before cutting and enjoying.
- to take to the beach like I do, wrap individual squares in plastic wrap and keep in the cooler!
Notes
- to make these vegan, use vegan marshmallows and vegan butter.
