Ingredients

- 1/3 cup butter, room temp
- 1/2 cup granulated sugar
- 1 large egg, room temp
- 1 1/2–2 mashed ripe bananas
- 1 tsp ceylon cinnamon
- 3/4 teaspoon vanilla extract
- 1 1/4 cups all purpose flour
- 1/4 teaspoon flaky maldon salt (plus more for topping)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup chocolate chips
Instructions
- Pre-heat oven to 350 and line a baking sheet with parchment paper.
- Mix butter and sugar until fluffy. I usually do this by hand with a whisk and it takes a few minutes!
- Add in egg, mashed banana, and vanilla.
- In a separate bowl mix flour, cinnamon, baking soda, and baking powder.
- Slowly add to wet mixture. Once combined, add in chocolate chips.
- Drop spoonfuls onto baking sheet and bake for ~15 minutes – when the edges are brown they are done!
- Remove from oven, let cool completely on a wire rack (the middle will be a little doughy), and sprinkle with Maldon flaky salt.
Notes
- Add your favorite banana bread toppings in place of chocolate – pecans or walnuts come to mind!
- To bring fridge eggs to room temp place them in a bowl with warm water
