Ingredients

  • 1/3 cup butter, room temp
  • 1/2 cup granulated sugar
  • 1 large egg, room temp
  • 1 1/22 mashed ripe bananas
  • 1 tsp ceylon cinnamon
  • 3/4 teaspoon vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/4 teaspoon flaky maldon salt (plus more for topping)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup chocolate chips

Instructions

  1. Pre-heat oven to 350 and line a baking sheet with parchment paper.
  2. Mix butter and sugar until fluffy. I usually do this by hand with a whisk and it takes a few minutes!
  3. Add in egg, mashed banana, and vanilla.
  4. In a separate bowl mix flour, cinnamon, baking soda, and baking powder.
  5. Slowly add to wet mixture. Once combined, add in chocolate chips.
  6. Drop spoonfuls onto baking sheet and bake for ~15 minutes – when the edges are brown they are done!
  7. Remove from oven, let cool completely on a wire rack (the middle will be a little doughy), and sprinkle with Maldon flaky salt.

 


Notes

  • Add your favorite banana bread toppings in place of chocolate – pecans or walnuts come to mind!
  • To bring fridge eggs to room temp place them in a bowl with warm water
