grinder sandwiches
a version of this recipe went viral on tiktok during quarantine and i just can’t stop making them. this week, they were hurricane grinders because we weren’t sure if we were going to lose power so i prepped a big sandwich to cut into pieces and eat all weekend long.
Printgrinder sandwiches
Ingredients

- one large italian or french loaf or a bag of 5-6 ciabatta rolls
- provolone cheese
- roasted red peppers
- tomato
your favorite deli meat:
- 1 lb genoa hard salami
- 1 lb turkey
- 1 lb hard genoa salami
for the lettuce mix:
- 1–2 cups shredded iceberg lettuce (or romaine)
- 1/4 red onion, sliced thin
- 2 cloves of garlic, grated
- diced pepperoncinis & juice to taste
- 1/4 cup mayo
- 2 tbsp red wine vinegar
- 1 tsp oregano
- salt and pepper to taste
Instructions
- pre-heat the oven to 350. line your baking sheet with your bread and rip out some of the middle so the ingredients have more room to comfortably fit.
- layer your favorite deli meat on one side and top with cheese. place in the oven for about 5 minutes or until the cheese is melted.
- while the cheese is melting, mix lettuce topping and set aside.
- pull the sandwiches from the oven and top with roasted red peppers, tomatoes or any other cold toppings you love, and lastly, the lettuce mix. slice into smaller sandwiches (ignore if you are making individual) and enjoy!
