Introducing…EAT EASY: MASTER BALANCED FOOD HABITS AND COOK WITH CONFIDENCE

cassidyeats

easy slow cooker chicken n dumplings

I’ve made this recipe for years and make it a little different each time depending on what’s in the fridge. My husband requests this often and it’s a “great throw in the slow cooker and have dinner + leftovers for a few days” type recipe.

easy slow cooker chicken n dumplings

  • Author: cassidyeats

Ingredients

Scale
  • 3 boneless skinless chicken breasts
  • 1 medium white onion, diced
  • 1 can cream of chicken condensed soup
  • 1 can cream of celery condensed soup
  • 1 tsp salt
  • 1 tsp pepper
  • 1 can of store-bought biscuit dough
  • 4 cups chicken broth

Instructions

  1. Place chicken breasts in the base of the slow cooker. Top with diced onion, 2 cans of soup, and broth.
  2. Set slow cooker to high for 4-5 hours or low for 6-8.
  3. Sixty minutes before you plan to eat open the biscuits and roll each one thin on the counter. Cut into squares and put into the broth and stir.
  4. Depending on how you like your chicken, you can use two forks to shred the breasts inside the slow cooker for bigger chunks. If you like it all the way shredded, completely remove the chicken breasts and use kitchen aid mixer to shred.
  5. Top with veggies like corn and carrots and enjoy in a big warm bowl.

Notes

WW points: it depends what type and how many biscuits you use to determine the points. Use your recipe builder and divide by how many portions there are!
