If you follow me on Instagram, this recipe is old news. Egg roll in a bowl is such a consistent weeknight staple at our house. It’s so affordable and simple – two musts for keeping things easy during the week!

Ingredients

Scale
  • 1 lb ground pork
  • 1 bag of shredded coleslaw mix
  • coconut aminos
  • garlic
  • ginger
  • green onion
  • sesame oil
  • brown rice or cauliflower rice, for serving 

Instructions

  1. Brown ground pork over medium-high heat in a large pan.
  2. Once the pork is almost cooked, start adding in handfuls of the coleslaw mix topped with coconut aminos (or soy sauce). 
  3. As the coleslaw cooks down, add in minced garlic and ginger to your preference. 
  4. Turn down the heat on the stove and prepare rice for a base. 
  5. Before serving, stir in diced green onion and drizzle with sesame oil. 
  6. Enjoy!
