erewhon copycat: kale & white bean salad
I had this salad in LA a few months back and couldn’t stop thinking about making it at home. It’s simple, full of plant based protein, and is so delish! Check out the video here.

Ingredients
Scale
- 5–6 cups chopped kale, stems removed
- 1 can of white beans, drained and rinsed
- 1 avocado
- 2 tbsp hemp seeds
- 2 tbsp pumpkin seeds
- 2 tbsp sunflower seeds
dressing:
- 1/4 cup extra virgin olive oil
- juice of 1 lemon
- 1 tbsp dijon
- 2 tbsp maple syrup
- 2 cloves garlic, grated
- salt and pepper to taste
Instructions
- when it comes to a kale salad the first move is to always massage your greens. This makes them not so bitter! add chopped kale to a bowl and massage with 1 tsp salt and a drizzle of evoo. Let sit for 10 minutes.
- Add the dressing ingredients to a bowl and whisk until emulsified.
- Add beans, seeds, avocado, and dressing to massaged kale and toss well.
