erewhon copycat: kale & white bean salad

I had this salad in LA a few months back and couldn’t stop thinking about making it at home. It’s simple, full of plant based protein, and is so delish! Check out the video here.

erewhon copycat: kale & white bean salad

Ingredients

Scale
  • 56 cups chopped kale, stems removed
  • 1 can of white beans, drained and rinsed
  • 1 avocado
  • 2 tbsp hemp seeds
  • 2 tbsp pumpkin seeds
  • 2 tbsp sunflower seeds

dressing:

  • 1/4 cup extra virgin olive oil
  • juice of 1 lemon
  • 1 tbsp dijon
  • 2 tbsp maple syrup
  • 2 cloves garlic, grated
  • salt and pepper to taste

Instructions

  1. when it comes to a kale salad the first move is to always massage your greens. This makes them not so bitter! add chopped kale to a bowl and massage with 1 tsp salt and a drizzle of evoo. Let sit for 10 minutes.
  2. Add the dressing ingredients to a bowl and whisk until emulsified.
  3. Add beans, seeds, avocado, and dressing to massaged kale and toss well.
