fall kale and apple balsamic salad
Description
This is the amount I use for a giant salad that my husband and I share – it makes more than enough dressing to save for later!
Ingredients
Scale
for the salad:
- 2 cups kale, stems removed and chopped
- 1 large red apple (pick your favorite variety)
- 1/2 cup pomegranate seeds
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped almonds
- rotisserie chicken
for the dressing:
- 3/4 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1 tbsp dijon mustard
- 2 tbsp honey
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 garlic clove, minced
- salt and pepper
Instructions
- massage chopped kale with evoo and 1 tsp salt in a bowl and set aside for at least 10 minutes
- while the kale rests, chop apple, almonds, and chicken
- whisk dressing ingredients in a bowl and set aside
- add salad ingredients to a large bowl, drizzle with dressing, toss together, and enjoy!
