strawberry rice krispie treats

Ingredients

  • 3 tbsp unsalted butter
  • 1 16 oz bag of marshmallows
  • 6 cups rice krispies
  • unsweetened freeze dried strawberries
  • optional: natural red food dye

Instructions

  1. add parchment paper to an 8×8 baking dish and set aside.
  2. melt the butter in a saucepan on the stove on low.
  3. once the butter is melted, add in marshamallows and stir into melted butter.
  4. use a food processor or a mortar and pestle to break down 1/4-1/2 cup strawberries into a powder and add to melted marshmallow/butter mixture and food coloring, if using. the only difference will be the lighter pink color versus more red!
  5. add rice krispies to a large bowl, pouring the melted mallow mixture on top and mix everything together. I like to use my hands, and either add butter or oil to them first so they don’t stick.
  6. press down with a rubber spatula and add remaining strawberries on top for garnish.
  7. refrigerate at least an hour before cutting and enjoying.
  8. to take to the beach like I do, wrap individual squares in plastic wrap and keep in the cooler!

Notes

  • to make these vegan, use vegan marshmallows and vegan butter.
