fall kale and apple balsamic salad

Description

This is the amount I use for a giant salad that my husband and I share – it makes more than enough dressing to save for later!


Ingredients

Scale

for the salad:

  • 2 cups kale, stems removed and chopped
  • 1 large red apple (pick your favorite variety)
  • 1/2 cup pomegranate seeds
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped almonds
  • rotisserie chicken

for the dressing:

  • 3/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 tbsp dijon mustard
  • 2 tbsp honey
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 garlic clove, minced
  • salt and pepper

Instructions

  1. massage chopped kale with evoo and 1 tsp salt in a bowl and set aside for at least 10 minutes
  2. while the kale rests, chop apple, almonds, and chicken
  3. whisk dressing ingredients in a bowl and set aside
  4. add salad ingredients to a large bowl, drizzle with dressing, toss together, and enjoy!
