kale mushroom and mozzarella egg bites
Ingredients

- 8 eggs
- 1/2 cup mushrooms, diced
- 1/2 cup kale, shredded
- mozzarella cheese
- salt and pepper
- 4 tablespoons plain greek yogurt
Instructions
- pre-heat oven to 350 and spray a muffin tin with evoo
- dice veggies (I used kale and mushroom but you could do onion, peppers, etc) and saute in a pan with salt and pepper.
- whisk eggs and greek yogurt in a bowl – once your veggies are done cooking add to the egg mix and stir
- divide between muffin tin leaving 1/4 of an inch at the top (room to rise a bit!) and sprinkle each with mozzarella cheese, salt, and pepper
- place in the oven for 20 minutes or until the bites begin to separate from the pan and turn golden
- store in the fridge or freezer … if that last that long!
