the secret to the best japanese sweet potatoes

My personal brand is japanese sweet potatoes at this point lol. This type of sweet potato is by far my favorite and both my friends, family, and dog agree, the way I make them is what makes them so irresistible. My husband doesn’t like orange sweet potatoes but these he loves – just a note in case you aren’t a SP fan!

You can buy japanese sweet potatoes at Trader Joe’s (they typically come in a bag labeled Murasaki) or Whole Foods. I also have found them at Sprouts and my local farmer’s market!

Since it takes so long, I like to roast all that I buy at once for a very easy to reheat carb to pair with any meal. I like them cold out of the fridge, reheated in the microwave, and topped with either butter and salt or japanese bbq sauce!

Ingredients

  • japanese sweet potatoes
  • avocado oil
  • salt

Instructions

  1. preheat the oven to 425 and line a baking sheet with parchment paper.
  2. after cleaning and drying the potatoes, rub generously with avocado oil and salt on all sides.
  3. add to the oven and roast for 60-75 minutes depending on their size until soft!
