erewhon inspired overnight oats
Ingredients

- 1 cup almond milk (or milk of choice)
- scoop of collagen, if using
- 1/4 cup greek yogurt
- 1/4 cup oats
- 2 tbsp chia seeds
- 1 tbsp maple syrup
- 1 tsp vanilla
toppings:
- blueberries
- pumpkin seeds
- cinnamon
Instructions
- add all of the liquid first and mix well. especially if you’re using collagen, you want it to be well blended! I like to put the lid on whatever i’m using and shake it.
- add in the remaining ingredients and cover with lid.
- store overnight in the fridge and enjoy topped with blueberries, pumpkin seeds, cinnamon, or your favorite toppings
