I usually make snickers using dates the lazy way, but taking the time to make your own caramel and nougat is worth it EVERY TIME!!!!!

Ingredients

  • 1 cup medjool dates, pitted
  • 1 cup peanuts
  • 23 tbsp nut butter
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 cup almond flour
  • 8 oz dark chocolate baking chips
  • 12 tsp coconut oil

Instructions

  1. Soak pitted dates in hot, not boiling water for up to 10 minutes to soften.
  2. Reserve some of the date water and add drained dates to the food processor with nut butter, salt, and vanilla and blend to make caramel layer.
  3. As needed, drizzle in reserved date water and pulse food processor to thin caramel into the perfect consistency.
  4. Remove caramel and set aside.
  5. Add almond flour, 1-2 tbsp of the caramel and blend until it forms a crumbly dough.
  6. Press almond flour nougat into the bottom of a prepared loaf pan, add a layer of caramel, and press peanuts gently into the top of the caramel and place in the freezer at least 3 hours or overnight.
  7. Time for chocolate! Remove from the freezer and cut into strips. Melt chocolate and coconut oil in the microwave in 30 second increments, stirring in between, until melted.
  8. Use a wire rack to cover snickers in chocolate. Top with crushed peanuts and/or flaky salt and place in freezer at least 1 hour.

store in the freezer, good up to a month.
