stuffed zucchini boats

Ingredients

  • 2 medium-to-large sized zucchini
  • 1 jar of rao’s sauce
  • small white onion, diced
  • 34 cloves of garlic, minced
  • 1 lb hot italian sausage (feel free to sub with mushrooms, tofu, beef, etc)
  • mozzarella cheese

Instructions

  1. slice zucchini in half and scoop out the middle using a spoon, reserving in a bowl for later. be careful not to puncture the skin! pre-heat oven to 350.
  2. bring a saute pan to medium-high heat and add olive oil. add in onion and garlic with a pinch of salt, stire until the onion starts to become translucent. this recipe is versitale so if you have other veggies, add them in at this part.
  3. add italian sausage and break up with a wooden spoon.
  4. once the sausage starts to brown, add in zucchini ‘guts’ and stir. the zucchini has a lot of water so be sure to let this completely evaporate before adding to your boats so they don’t get watery.
  5. once the meat/veggie mixture is cooked, add in a jar of rao’s sauce and mix.
  6. add zucchini boats to a small sheet pan or baking dish and scoop in marinara mixture. top with mozzarella cheese and bake for 20-25 minutes.
  7. turn on the broiler and let the cheese melt for a few minutes more (roughly 2-3) and stay close by. it can burn quickly!
  8. remove from the oven, slice into pieces and enjoy!
