stuffed zucchini boats

- 2 medium-to-large sized zucchini
- 1 jar of rao’s sauce
- small white onion, diced
- 3–4 cloves of garlic, minced
- 1 lb hot italian sausage (feel free to sub with mushrooms, tofu, beef, etc)
- mozzarella cheese
Instructions
- slice zucchini in half and scoop out the middle using a spoon, reserving in a bowl for later. be careful not to puncture the skin! pre-heat oven to 350.
- bring a saute pan to medium-high heat and add olive oil. add in onion and garlic with a pinch of salt, stire until the onion starts to become translucent. this recipe is versitale so if you have other veggies, add them in at this part.
- add italian sausage and break up with a wooden spoon.
- once the sausage starts to brown, add in zucchini ‘guts’ and stir. the zucchini has a lot of water so be sure to let this completely evaporate before adding to your boats so they don’t get watery.
- once the meat/veggie mixture is cooked, add in a jar of rao’s sauce and mix.
- add zucchini boats to a small sheet pan or baking dish and scoop in marinara mixture. top with mozzarella cheese and bake for 20-25 minutes.
- turn on the broiler and let the cheese melt for a few minutes more (roughly 2-3) and stay close by. it can burn quickly!
- remove from the oven, slice into pieces and enjoy!
